Black Bean Salad
1 can of Black Beans (or soak 1 cup 12-18 hours . Drain and cook)
¼ cup of cilantro
¼ cup of diced tomatoes
1 small-diced cucumber
¼ cup feta or goat cheese optional
1 tablespoon of olive oil
Add a sea salt and pepper
Stir and ENJOY! Eat alone or with veggie, crackers or roll it up in a rice tortilla
